In the production of meat products, meat grinders are essential tools. For the production of products such as ham sausages and lion's head meatballs, meat grinders are the first process step. The meat is ground into fine particles and then rolled or mixed to produce different shaped products. As the New Year approaches, making sausages has been put on the agenda for every household. However, when using food processing machinery such as meat grinders, it is necessary to operate them in a standardized manner and pay attention to safety.
When stuffing sausages, it is usually not necessary to use hands to push the ingredients. However, due to the recent influx of customers ordering sausages, sometimes too much ground meat is stuffed in at once, causing the meat at the feeding port to get stuck and unable to move forward. In such cases, it is necessary to press down with one's hands. When asked by the reporter why wooden sticks or other objects were not used, the operator explained that although there are tools or wooden sticks for pushing the ingredients, for the sake of convenience, hands are still the most commonly used method.
Meat grinders come in both electric and manual versions. While electric ones are labor-saving, they are noisy, have a short continuous operation time, and employ a direct cutter-type grinding method. This method involves using a high-speed rotating blade to crush the meat by impact. Due to the high speed, the meat is often beaten to a pulp, resulting in a loss of viscosity and original meat flavor. In some cases, the ground meat from pork and lamb becomes indistinguishable, let alone the texture. Therefore, nowadays, many people are returning to the basics and using manual meat grinders.

1. Place the machine body on the edge of the table and tighten the fixing screws at the bottom of the machine body to ensure that the machine can grip the tabletop firmly and stably.
Before grinding the meat, remove the skin and bones first. Then, cut it into long strips, taking care not to cut it too finely. Add the meat from the feed inlet, and then rotate the handle clockwise. When the rotation feels slightly heavier, it indicates that the meat has already come out. When the rotation feels lighter, it indicates that there is no meat inside and more needs to be added.
Precautions for using the meat grinder:
1. Before use, check whether the components of the meat grinder are complete and whether the components of each part are properly installed.
2. Connect the power supply and operate the machine without any load to check if it works normally.
3. Only when you have confirmed that the machine is free from any faults can you put meat into the meat grinder for operation. The meat you put in must be cut into rectangles measuring 20CM in length and 3CM in width.
4. During operation, hands must not be brought close to the meat inlet. The distance between the hand and the meat inlet should be maintained at over 15CM. Any distance within 15CM is considered a risk zone. When operating within the risk zone, it is necessary to use tools, and the length of the dedicated tool must be over 20CM.
5. Operators must not wear gloves to prevent the risk of gloves getting entangled in the machine.
6. The ground around the meat grinder must be free of water, oil stains, debris, etc., to prevent the operator from slipping and posing risks.
After the operation is completed, first switch off the power, then thoroughly clean the machine from inside to outside, and finally wipe it dry with a cloth for future use.
When cleaning the meat grinder, avoid directly flushing it with water to prevent the risk of equipment leakage due to water entering the grinder.
9. If a violation occurs and the hand enters the interior of the machine, immediately turn off the machine's power switch and perform emergency rescue measures.
10. Without undergoing training and without the permission of the leadership, no new staff member may use the machine without authorization. Otherwise, severe punishment will be imposed. |
